RIBBON PAKODA

INTRODUCTION

INGREDIENTS

I am posting Ribbon Pakoda recipe and as a bonus for waiting so long, I am posting my favourite Onion Masala Pakoda too. ! So enjoy!!


Kadalai Maavu (Besan) 1 cup
Arisi Maavu (rice flour) 3 cups
Sesame seeds 1 spoon
Chilli powder 1 spoon
Asafoetida/Garlic/nothing optional (plain or any of ingredients to taste)
Salt To taste
Oil for frying

EQUIPMENT
Murukku Machine with ribbon sieve mold. 


 

 

METHOD OF PREPARATION

 

Mix rice and Bengal gram flours along with Sesame seeds roughly beaten/plain unbeaten. If you want, you can make paste of six or seven cloves of garlic or add half spoon of Asafoetida . But don't mix both. It is either or. 

Add salt to taste mix thoroughly and now add water little by little and knead the dough to Ompodi dough softness. Leave the dough aside for ten minutes. 

Now smear some oil on the inside of the Murukku machine.  Fit the ribbon pakoda sieve and fill it up with dough.  Heat about 250 ml of oil in a kadai .  When hot, test with a small flattened portion of dough. Now using the murukku machine, drop ribbons of 4 to 6 inches maximum in oil and fry till golden brown(till bubbles subside). 

Allow to cool and leave the moisture. 

Pack in airtight containers (if you are living in coastal areas).  From the same dough , you can make murukkus . But don't add garlic. Add a pinch of perungayam and avoid chilli powder . Use murukku sieve.
