KACHORI

INTRODUCTION

INGREDIENTS

Kachori is a savory which is on a slightly Hot and Sweeter side. Rajasthani Kachoris are very hot, Gujarati Kachoris are hot and sweet. Rajasthani Kachoris are rather large and have wet masala. Any way, Kachori is there to make your taste buds tingle and bring a sssssssssssound with a tear and a few beads of sweat. But suffering is irrelevant if the Taste is Great!!!!.

FOR FILLING
Green Gram Dhall 150 gms.
Chilli powder 2 spoons
Black pepper powder 1/4 spoon
Copra grating 2 spoons
Poppy seeds powder 1 spoon
Fennel seeds (coarsely ground) 1/2 spoon
Clove+Cinnamon powder 1 spoon
Garam Masala 1 spoon
Sugar (powdered) 2 spoons
Black Salt 1.5 spoon

INGREDIENTS FOR KACHORI COVER
Maida 3/4 cup
Rawa 3 spoons
Salt 1/2 spoon
Oil for frying

 

METHOD OF PREPARATION

 

Soak the dhall for about two hours to three hours. Take some oil in a kadai and put soaked dhall after draining all the water in it. Set it on a low medium flame. Cover the kadai.It will take about ten minutes to fry/cook the dhall.Put all the dry masala and spices like chilli powder, garam masala powder, Copra etc. Thoroughly mix and fry for another minute or two on a low flame. By this time the filling mixture would be almost dry. Add sugar and salt , mix and set it aside. Check the filling mass for salt. After the filling is cold, mash the filling thoroughly by hand or using a grater taking care to see that the resultant grated filling is dry. 

Prepare dough for Kachori cover by adding little water to Maida+Rawa . The dough should not be too loose or tough. Roll thick poories of about 4,5 " sized diameter. Take about two spoons of the kachori filling and place it in the center of Maida poori. Gather the sides of poori and make a ping pong Ball sized kachoris .Cut extra maida from top and set all the Kachoris in a plate. Now take oil for frying in a Kadai and Deep fry kachoris on a slow fire only. The colour of Kachoris should be Biscuit brown and not deep brown. Drain excess oil by putting the kachoris on tissue/Old news papers. This kachoris will not spoil for ten days. Make sweet /sour Date chutney and enjoy the Kachoris
